Recipes I eat, but don’t cook.
Kevin likes to cook—and I’m not mad about it. How unfair it would be to keep him from something he loves! So I do the shopping and cleaning. Pretty sweet deal.
He made one of his favorite childhood recipes for BBQ Biscuits recently and they immediately went on the make again list. It’s really pretty easy to make, minimal prep and pretty sure the whole family will love ‘em.
The LaMarca Family Totally Proprietary, Trademarked, Often Imitated but Never Duplicated BBQ Muffins
1 – 12 ounce can refrigerated buttermilk biscuits (flaky are best)
½ lb – ground beef
¼ cup – ketchup
1 ½ tablespoon – brown sugar
1 ½ tablespoon – apple cider vinegar
¼ teaspoon – chili powder
½ cup – shredded cheese
Separate biscuits; pat or roll into 5” circles on a lightly floured surface and press into greased muffin pans.
Brown ground beef until it crumbles; drain.
Stir in ketchup, brown sugar, apple cider vinegar, and chili powder. Fill biscuits with meat mixture.
Bake at 375 for 15 minutes, then sprinkle with cheese and bake 5 min more. (I bake for about 15-17 min total to avoid drying out)
